If you are looking for an easy, delicious appetizer… look no further! These stuffed mini sweet pepper poppers are so good! (Bonus: They are KETO Friendly, low carb and gluten-free)
Here are the ingredients that you will need:
Cream Cheese, Bacon, Sweet Peppers, Jalapeno Peppers, Chives or Green Onions and Cheese.
Cook the bacon in the oven. I like to place mine on a cooling tray on top of the cookie sheet that is lined with aluminum foil so that the bacon gets crispy all around. (Plus the clean up is much easier this way)
Crumble the bacon into small bits. Mix the cream cheese, shredded cheddar cheese, diced jalapenos, diced chives and bacon bits all together.
Cut off the tops of the sweet peppers and get all of the membranes and seeds out of them.
Stuff each of the sweet peppers with the cream cheese mixture and let them sit in the refrigerator for several hours before serving.
